There's some categories of fiction which are relatively rare in visual novels. These include:
* Gamebooks. If you think about it, they're conceptually identical to VNs, except that they exist as prose novels, and sometimes include illustrations. Let's think about convergence, and whether we want more overlap between VNs and gamebooks.
* Reality TV. Creative step #1 is writing a premise like "so you're a contestant on a reality dating show..." Think of the next few steps in creativity.
* Sports stories.
* Cooking stories, whether they're about amateur or professional chefs.
* Historical fiction, with no fantasy or speculative fiction elements.
* Epistolary novels.
* Westerns. Make it as classic or revisionist as you want, and use whatever setting you like best.
* The summer blockbuster. For additional consideration, ask yourself how you'd portray action scenes on a minimal budget.
* Bromantic comedy.
* (Auto)biography.
* Collectible creatures.
How many of these are worth writing? If you ask me, I'll say "all of them, and more." Try just one as part of your premise, and see what you can do.

Yeah, I think that alot of those would do it well on the market :) Maybe with the exception of Epistolary novels :/
