Obviously I'm not expecting depictions of underaged sex. Again, pointing to KS as an example, the girls are all 18 when their respective sex scenes take place, but at least one of them (Hanako) is almost certainly a virgin. Even Emi, whom I think it's safe to assume may be more sexually experienced than the other girls, doesn't perform like a porn star. She has her moments of awkwardness and discomfort, as do the other girls. For me, that made those scenes more believable. If the creators want to include on-screen sex scenes in Missing Stars, then that's fine, I guess. It's your game, do what you want.
If you ask me, the story will be better if the sex scenes are not considered obligatory. If the narrative is just as good, or better, without explicit sex, then the adult content can probably be excised from the story. If the characters, relationships, and story are genuinely interesting, then it can be distracting or even discouraging to toss in on-screen sex. I hope that the creators are not using as a gimmick to attract an audience, or to keep the audience from being bored.
Also, I don't mind games and stories in which the main character has more than two potential love interests. Even if the main character is trying to keep the multiple relationships active, or if the person's goal is to have more than one life partner. But is this *really* necessary? More often than not, the story or game is just as interesting if there is only one or two probable love interests. Making a harem or a love polygon tends to strain plausibility, and often takes the concept from an entertaining wish fulfillment fantasy to a ridiculous wish fulfillment fantasy. One should not assume that everyone that the main character interact with could be his/her significant other. Instead, the MC should have friends, family, coworkers, and so on.

I don't think either the total absence or the abundance of sex scenes would make me lose interest in Missing Stars. I've enough trust in the kind of people who'd collaborate to make VN, plus visual novels are in my opinion the closest there is to "a game featuring sexual content for adults" as opposed to "an immature unapologetic porn toy you lose interest in as soon as you're finished masturbating".
That said the only visual novel I've played was KS, and I've probably a lower tolerance for gratuitous fan service than average (I like anime, but I'm jaded and unmoved by much of it really). If KS didn't have such vanilla (I'd argue relatively believable rather than plain vanilla) sex scenes I don't know how I'd have reacted to it. Having spent that much effort in characterising the cast as regular teens (albeit ones living with disabilities) I think it'd have been too jarring and immersion breaking to maintain my interest.

I'd encourage the writers to take free reign and add as much or as little sex scenes as you feel like, I'd only ask it stays somewhat grounded in reality and believably true to the characters: please don't release something as cringeworthy as a VN of Sucker Punch*.
